A customer wants cedar fence pickets cut down for deck skirting what size spacing should i use for them or should i leave no gap at all

All personal preference. Depends on what the house is sided with, the design of the deck, personal tastes of the owner.
Assuming basic, down and dirty, 1x6 pickets with no gap because the pickets will dry out and create their own 1/2" gap within a year. If you want zero gaps ever, you will need to lap the edges or do battons over the joints.
